Aaron Gross directs the Center for Food Systems Transformation (CFST) at the University of San Diego, where he is also Founding Faculty in Food Studies and a tenured Professor of Theology and Religious Studies. CFST supports research and practice aimed at equitable, climate-friendly food systems, with a focus on reducing food-related Scope 3 emissions in higher education and closing the gap between institutional values and campus food practices — work that runs through faculty, students, and dining operations alike. Gross is founder and board chair of Farm Forward, whose research and advocacy target factory farming, and co-founder of the Better Food Foundation, which develops and deploys behavioral strategies, including plant-based defaults, to shift institutional procurement and student food choice. He collaborated with Jonathan Safran Foer on Eating Animals and brings more than two decades of work in food ethics and animal agriculture to applied campus change.
