Dr. Enriqueta Martinez-Rojas. She holds a Ph.D. in Bioanalythics from the Technical University in Berlin, where she specialized in Biotechnology aimed on flavoring and aroma production. After her research exchange at the pharmaceutical industry, she joined the Department of "Special Analysis" at the Institute of Brewery Research in Berlin (VLB) where she specialised in the Metabolomics tools aimed at elucidating the chemical structure of some bioactive compounds isolated from different matrices with the main focus on fermented and distilled beverages. Currently she is a lecturer applied fermentation and distillation process at TU-Berlin. As research advisor at the Institute for Nutrition and Food Technology in Neubrandenburg, Germany, she has been involved in strategic cooperative projects of raw materials and functional beverage production using a link between bioeconomy, applied microbiology and functionality of agrowaste in a sustainability manner. In 2014, she founded MAYAHUEL: Tequilaverkostung in Germany, where she offers seminar and tasting about Agave spirits.
