Allergen Management for School Nutrition
This session will cover the Big-9 Food Allergens, including prevalence, derivatives, and practices in reading a label to discover unexpected ways allergens can appear in foods. Participants will learn the signs and symptoms of food allergies, what to do when a person is suffering from food allergy, as well as learn about allergen controls - cross-contact, preparation practices, and proper cleaning.
