Airplane mode: which governance controls survive when you unplug the cloud

Pull the cable. Some data can't leave the building: an industrial plant, a hospital, a public agency with sovereignty requirements, a ship at sea. Taking AI there is already possible with local models. The hard part is making governance come along, because almost all your AI controls live in the cloud.

In this session we run the same AI-over-data application in two modes, in Azure and locally with SQL Server 2025 and Foundry Local, and we pull the cable live. Then we go control by control through what keeps working: SQL Server's sensitivity classification decides which data can go to which model, auditing stays local and is forwarded to Sentinel when the connection comes back, and we see what happens to identity, content filters and Purview visibility when there's no cloud to ask.

You'll leave with an honest inventory: which controls have a local equivalent, which ones you have to build, and which ones are simply lost. And a rule of thumb so that "works without internet" doesn't mean "works without rules".
