Shannon Kaylee Wolcott Mosley (she/her) is a maintenance technician at Sapporo-Stone Brewing. Shannon's journey in fermentation began in 2015 when she owned and operated ^5 cider in Portland, Oregon. She was eager to explore various fermentation disciplines and transitioned to working as a Distiller at McMenamins in 2018. Later, she became the inaugural Head Distiller at Shine Spirits in 2019. In addition to her hands-on experience in cider and spirits production, Shannon also dedicated her time to education. She worked as a general aide for the Business of Craft Beverages class at Portland State University, collaborating closely with Mellie Pullman. In 2018, Shannon, alongside Jeff Allsworth, co-taught the BB401 and BB402 classes until May 2020, demonstrating her passion for sharing knowledge within the industry. The pandemic brought significant changes for Shannon, leading her to relocate from Portland, Oregon, to Saint Paul, Minnesota. This marked a shift from production to the equipment side of the beverage industry, where she was involved in installing and constructing vacuum distillation equipment from 2020 to 2023. In 2023, Shannon returned to the West Coast to join the maintenance team at Sapporo-Stone Brewing, where she continues to contribute her expertise and passion for fermentation and equipment maintenance. Her diverse background and commitment to excellence make her a valuable asset to the brewery's maintenance operations.
