Participants will understand the 5 risk factors for Foodborne Illness and control for each, how to safely handle food including personal hygiene, glove use, and more, as well as learn about safe display and service of food.
Allergen Management for School Nutrition
This session will cover the Big-9 Food Allergens, including prevalence, derivatives, and practices in reading a label to discover unexpected ways allergens can appear in foods. Participants will learn the signs and symptoms of food allergies, what to do when a person is suffering from food allergy, as well as learn about allergen controls - cross-contact, preparation practices, and proper cleaning.
