She was eager to explore various fermentation disciplines and transitioned to working as a Distiller at McMenamins in 2018. Later, she became the inaugural Head Distiller at Shine Spirits in 2019. In addition to her hands-on experience in cider and spirits production, Shannon also dedicated her time to education. She worked as a general aide for the Business of Craft Beverages class at Portland State University, collaborating closely with Mellie Pullman. In 2018, Shannon, alongside Jeff Allsworth, co-taught the BB401 and BB402 classes until May 2020, demonstrating her passion for sharing knowledge within the industry.
